Native raspberries

Postby RedP » Thu Oct 27, 2011 3:20 pm

Native raspberries are very good this year, at least here in NSW Northern Rivers, presumably because of the unseasonally wet 'dry' season. Here's a load soaking to remove any critters:

I've boiled these with an equal quantity of sugar, plus just enough water to cover, to make a syrup. I'll then use the syrup in various recipes, including a liqueur. And the best thing is - there are plenty more fruit still to ripen!

Anyone else got favourite recipes for native raspberries?

Cheers,
Richard

Sorry folks - I can't get the photo to load.

I've uploaded it to the photo gallery under 'Bushfoods & Bushfood Plants' if you want to have a look.

No worries, Bluetongue - glad you found the photo!

Since posting, I've found the syrup is great just drizzled over a citrus cheesecake - nice balance of flavours. (Meanwhile, the liqueur is now slowly maturing...)
