Has anyone bought smoked emu and native meat smallgoods?

Including kangaroo, emu, native honey, mushrooms, etc.

Mark Olive mentioned smoked emu in some of his recipes. I'm keen to try this all his recipes that I've tried so far are great. Has anyone bought or tried smoked emu, especially around Brisbane? I'm in Brisbane, and the closest emu farm aren't planning to get any till next year. Dilly Bag on the northside don't get any. I can get kangaroo proscuitto, wallaby salami, emu kabana and some others from here.

Yes! I got some from Fish Game and More in Adelaide. Was lovely. I'm not sure if they would do mail order or not, but they might be able to put you onto their wholesaler you could ring to find local outlets

A lot of touristy places sell kangaroo, emu and crocodile jerky, which varies in quality from about 50% salt 50% msg to almost pure meat and delicious. Its sad that they only sell it to tourists and don't have larger quantities available for locals.

Have a look at a few recipes, i smoke and dry my own meat, including roo and emu. Im from the goldcoast. i find apple wood to be nice and not over powering for emu. its very easy to do your self including making cured meats eg bacon and parma meats.

Thomas B: I make/sell my only jer ky, only beef though. but only in larger quantities.

i've had kangeroo i love it. i havent yet try the others that you guys menshioned, i didnt know you could buy it. must but hard to find? but i havent really had a good look.

I'm trying to think where I've seen roo _jerky_ ... beef jerky's now in a lot of service stations - it might be possible some of them stock the roo version ...??

I found smoked goods at Eco Meats in Belconnen - emu, kangaroo, wallaby, possum, etc - and completely forgot to look for jerky. Pretty certain it'll be around.

Bluetongue, it may well be worth getting to the Vic Markets in Melbourne and trying the deli section there. Even if someone doesn't stock it, I bet someone knows of a place where it is stocked.

The Essential Ingredient (or is it still called The Vital Ingredient?) in South Melbourne may also stock roo jerky or, again, know where to source it. You could call them directly - website is http://www.theessentialingredient.com.au/ and should have phone numbers.

Thanks mate. I haven't been able to come up with a good reason to visit the big vehicle emission lately. That might just do it.

Designate yourself a "market day" and do all of the big foodie markets - Vic, South Melbourne, and Prahran. Then go to Kuranga Nursery for the bushplants and their cafe.

Heck, I'd make a special trip to Melbourne just for THAT schedule ... :)

Ha. You've never been to Kuranga Nursery by public transport, have you? :) One hour by train from Melbourne, followed by a bus trip.

The rest sounds feasible tho and if I went on a Saturday I could stop in at the Rose Street craft market (Fitzroy I think)... mmm. And pop into the Koorie Heritage Trust... ok I might just have a plan.

Thanks Ant for sharing your tips. Others, thanks for suggesting some of those stores, but I live in Brisbane and it'd be unlikely for me to get these.

Instead, I've found a way to make my own native meat smallgoods using my new kitchen appliances: a Dehydrator and KitchenAid Mixer with Mixer attachments. The mixer takes attachments to turn into a variety of appliances. With my grinder & sausage stuffer attachment, I can now grind my own emu & kanga meat, then produce native sausages flavoured with any of my native spices, sauces & seasonings.

There's a terrific sausage book that tells me how to make kabana and there are kabana & smallgood spices readily available. I know where I can buy emu & kanga cuts of meat. All I need more is to learn on how I could make smallgoods with my KitchenAid attachments, as I'm only a beginner, having only started with my first sausages.

By the way, you might question why bother make your own if I can buy emu & kanga sausages, emu kabana, native jerky (I can buy these locally). Well I know what's going into them; I can add whatever I want into them (versatility); can work out cheaper (eg emu sausages & emu kabana are expensive); saves heaps of travel time; have it more available to me; sausages can taste better than shops as was my experience with beef. Also I can't get hold of smoked emu so maybe I could make my own. [Kangaroo proscuitto is not something I'd try and I can buy some here (it's rich & delicious if you haven't tried it)]

My dehydrator makes jerky, haven't tried it yet, but keen to make some emu & kanga jerky.

Please share any more tips on smoking goods. Apple wood was mentioned above. What do you smoke them in? Eg do you use a bbq, a smoker etc?
