Native raspberries are very good this year, at least here in NSW Northern Rivers, presumably because of the unseasonally wet 'dry' season. Here's a load soaking to remove any critters:
I've boiled these with an equal quantity of sugar, plus just enough water to cover, to make a syrup. I'll then use the syrup in various recipes, including a liqueur. And the best thing is - there are plenty more fruit still to ripen!
Anyone else got favourite recipes for native raspberries?
